The most common culprits are over- or under-measuring (we recommend using dry measuring cups, leveled off), oven temperature variations (use an oven thermometer), and ingredient temperature (cold butter vs. room temperature can make a big difference). Our recipes are primarily tested at sea level in Austin, TX. If you're baking above 3,500 feet, you may need to make adjustments β€” typically reducing baking powder slightly, increasing liquid, and adjusting oven temperature. We're working on high-altitude notes for our most popular recipes.
